Cucumber Pear Mojito Slushies

Crisp cucumbers and sweet pears make a surprising and delightful combination in this refreshing slushie. Lime and mint add a little mojito flair. There’s no juicing required for the pears and cucumber, so you get all of the nutrition from the whole fruit and vegetable, too.

Ingredients
  

For the slushies:

  • 1 medium cucumber, peeled, seeded and chopped
  • 2 medium pears, cored and seeded
  • ¼ cup fresh-squeezed lime juice
  • 1 sprig fresh mint
  • 1 tbsp agave nectar or honey
  • 1 cup ice cubes
  • ½ cup seltzer or water

For garnish:

  • Mint leaves
  • Lime slices

Instructions
 

  • Cucumber Pear Mojito Slushies
    Serves 4
    1. Combine all of the slushy ingredients in a blender, in the order listed.
    2. Blend at high speed for about 1 minute, until smooth.
    3. Pour into chilled glasses and serve right away. Garnish with mint and lime.
