Sweet Potato Hummus
Ingredients
Sweet Potato Hummus
- 2 large organic sweet potatoes, well washed, unpeeled (skin has extra fiber and nutrients)
- 1 (14-ounce) can organic chickpeas, drained and rinsed
- Juice from 1 lemon
- 1/3 cup raw organic tahini
- 2 tablespoons extra virgin olive oil
- 1 tablespoon ground cumin
- 2 garlic cloves
- ½–1 teaspoon Aleppo chili pepper flakes
- ½ teaspoon sea salt
Instructions
- Slice potatoes in ½-inch rounds. Steam over boiling water until tender (approximately 10 minutes). Allow to cool and then puree in a food processor with remaining ingredients until smooth. Adjust seasonings and add a little water if too thick.
